Franck Clodung | Director of Operations & Catering
Franck Clodung has led an illustrious career, in the industry, working for some of the world’s best-known restaurateurs, around the world, including Sir Terence Conran, Francois Payard, and Daniel Boulud.
Originally hailing from France, Franck comes from humble beginnings; at just 16 years old, he started his career as a waiter for a catering company in Toulon, France, then worked for a 4 star hotel restaurant on the French Riviera as a bartender. Franck spent 15 years, between Provence, Paris and London, which included stints at the well-known La Coupole, in Paris, and Sir Terence Conran’s Quaglino’s, in London, before taking the leap to move to the dynamic New York City.
In New York City, Franck delved right in, working for Chef Francois Payard as the Maître d’hôtel, then as Retail Operation Manager, for 11 years. In 2009, Franck was brought on to open the 54th street Financier Pastry Shop location, and in the following year, he joined Chef Daniel Boulud to open Epicerie Boulud, at Lincoln Center.
In 2013, Franck joined the Tastings team as Director of Catering & Operations. He enjoys spending his spare time experimenting with cooking and baking as he believes, like Chef Fernand point, “In all professions without doubt but certainly in cooking, one is a student all his life.”
“Tastings reaches out to a large variety of clients, adapts to unique spaces with difficult and challenging configurations. Tastings is creating relationships based on trust, confidence, knowledge and adapts any proposal to the needs of their client (concept, theme, etc.) Tastings creates taste and combines flavors to bring a unique food experience, from bite size to dinner to a food bar. We are combining a French based technique with multicultural influences mirroring the variety of food influence in New York City and eventually the world.
